CAP-e/gram

The graph below shows the scientific way of looking at the data, which is per gram.  When we compare 1 gram of blueberries (~1 mid-sized blueberry!) to 1 gram of oregano, oregano had more antioxidants available to live cells.  Oregano as a nutritional supplement would provide a concentrated source of antioxidants available to cells.  However, this does not translate in proportion to where we are most likely to get antioxidants from in our diet.

A portion of fresh berries is 1 cup, which is approximately 120 grams.  Therefore, a serving of fresh berries would provide approximately 42 CAP-e units. A cup of hot chocolate usually contains 1 tablespoon of cocoa (5 grams), thus a cup of cocoa would equate to 20 CAP-e units.  The amount of dried oregano on 1 small pizza could reasonably be ¼ teaspoon, equivalent to 0.2 gram. Therefore, the oregano on the pizza would contribute 2 CAP-e units.

Teas and extracts

For tea, the liquid represents an intermediate between the crude plant powder and the powdered extract. The use of high-potency extracts of different teas, allows intake of higher levels of tea polyphenols and other bioactive compounds. A person drinking 6 cups of green tea per day would ingest the same level of antioxidants as a person consuming 1 gram of the tea extract used in the example below.

 
Extraction methods

Many potent antioxidants are not water-soluble. The curcuminoids in the spice Turmeric (Curcuma longa) is an example of such hydrophobic antioxidants. Low bioavailability is often an issue. In this example, the crude spice powder of turmeric was dissolved in either dimethylsulfoxide (DMSO), 95% ethanol (EtOH) or physiological saline (PBS). The use of solvents allows the compounds to be handled in the laboratory and suggests/predicts effects that may play a role after consumption.
